1/2c Quinoa Australia Quinoa
Handful of Rocket
Diced 1/2-1c vegetables of choice: I used; capsicum, onion, grated carrot, zucchini etc.
1tbsp pine nuts
1 garlic clove minced
1-2tbsp Chobani 0% Greek yogurt
1/4c organic sundried tomato pesto
Coconut MagicCoconut oil or macadamia oil to cook with
Optional; feta, chicken, sundried tomato, potato etc.
1. Cook your quinoa as per directions.
2. Cook your vegetables in some coconut oil or macadamia oil until softened with your garlic.
3. Stir your vegetable mix into your cooked quinoa and stir in your nuts and pesto. Add your Greek yogurt and rocket and stir through (add feta at This point too).
Top with additional rocket.
