Dad’s Birthday Dessert

IMG_5169Dad’s birthday was this week, and it’s always fun to make a fuss! This year dad managed to get about three dinners dedicated to himself. One was a roast lamb, one was a delicious seafood chowder with Kirkpatrick oysters which my mum is amazing at and the other was one that Mum and I did for him over the weekend which included; Roast Duck with an orange sauce, braised red cabbage, cauliflower and potatoes creamy cheese bake and honey roasted tomatoes. Following this was my dessert of a chocolate self saucing pudding, with a homemade white chocolate as raspberry ice-cream – all of this resulted in come seriously fully bellies!


IMG_5170Chocolate self saucing pudding
Serves: about 6

2 tbsp cocoa powder
1tsp vanilla bean paste
1 eggs
1c self raising flour (must be SR)
1/2c milk
60g butter softened
110g caster sugar or I use brown sometimes

sauce – we double this!
2tbsp cocoa powder
1/2c brown sugar
1 1/4c boiling water

1. Grease a large dish for baking and enough room to allow the cake to rise.
2. Set oven to 180 degrees Celsius.
3. Cream your butter and sugar for the cake mix. add you egg and beat in well. Add your vanilla.
4. Sift your flour and cocoa.
5. Add the flour and milk inter-changeably ensuring fully combined for adding more (about three add ins).
6. scoop entire mix into the baking pot.
7. sprinkle over your cocoa and brown sugar for the topping onto the cake mix.
8. gently pour over the boiling water.
9. place in the oven to bake for about 50 minutes. bake until the center is set (skewer comes out clean)
10. Serve immediately nice and hot with ice-cream (below) and double cream!

White chocolate and Raspberry Ice-cream
serves: about 8-10 depending

2 egg yolks
1 whole egg
1/2c caster sugar
150g white chocolate melts (quality chocolate)
1tsp vanilla bean paste
300g raspberries (frozen)
300ml thickened cream

1. whip your cream into soft peaks and set aside.
2. whip your eggs and sugar in a bowl with vanilla until pale, thickened and creamy (about 5 minutes)
3. melt your white chocolate and add to the egg mix and whip in (do not add if to hot)
4. on low setting whip fold in your egg mix to the cream and stir in your raspberries.
5. Topp with nuts, more raspberries or coconut and allow to set for minimum 5hrs or overnight.
