I love anything quick and easy and thats what these are and something different too. Don’t be scared to try these ‘sweet’ too. Remember carrot cake, beetroot cake, ricotta cheesecakes, pumpkin pie and sweet potato cheesecakes? They are all vegetables in sweets and they work! And you get your vegetable fix.
1/2 finely sliced onion
1/2 finely grated zucchini
1/2 finely chopped leek
1tsp garlic paste
1tsp ginger paste
Pinch each of cinnamon, cumin, coriander and paprika
2 whole eggs
Salt and pepper
1. Sliced and grate all your veggies and squeeze out the liquid in your zucchini really well. Combine into a bowl with your other ingredients
2. Heat a hot plate with some coconut oil and cook spoon 1/3 of the mix. Cook until setting on top and flip over.
3. Continue to cook remaining mix and serve. 🙂 enjoy hot
Optional; add corn or other small veggies or some rice flour for thickening.
Add coconut flour to thicken and add some almond meal plus some milk (almond breezes honey almond milk) to bring to a pancake consistency. Add 1tsp coconut sugar. Add in some sultanas if you like and ensure evening is grated really finely and omit the onion, leek, cumin, coriander, paprika and pepper.
serve with a drizzle of maple and option all in: cacao.
