Still with Plenty of Melinda’s Gluten free goodie mixes this weekend called for the coconut and raspberry gluten free cupcakes to be made! They were delicious, in line with the other baking mixes and possibly a favorite! I even made them a touch naughty with the addition of a dairy free, white chocolate butter cream frosting – using dairy free spread.

Still to make I have at a home the gluten free chocolate fudge brownie (may get onto this one tonight and the gluten free red velvet cake – being a cake this may become a weekend mission. But nothing like having something to look forward to on the weekend!
