Fig Fruit Bites

I intended to originally make fig and pistachio bites, as they are delicious! BUT I wasn’t able to do that when I looked at the price of pistachios I couldn’t justify it! Those delicious salty green nuts that are so moorish just break the budget! So It was figs and a combination of what I thought would work from the cupboard!

If you love figs, this works, if you don’t, well like anything then this probably isn’t the recipe for you πŸ˜€

Fig Fruit Bites

Fig fruit bites
Makes about ten 25g bites

10 (60g) apricots
1/4c (30g) walnuts
7 (40g) dried dates
6 (100g) dried figs
1/3c coconut flour
2tbsp honey
Desiccated coconut to roll

Add everything to a food process, blend and away you go!
Roll through coconut and store in fridge

You could replace dates with sultanas and apricots with extra dates
Swap honey for agave or rice malt
Coconut flour can be swapped to almond meal
Walnuts can be swapped to almonds!
Options are endless depending on what’s on hand
