Nutty Buckeye Bites

Nutty Buckeye Bites, a peanut and nutty filling spiced with cinnamon and coated with a protein enriched chocolate. Of course you can use any chocolate you like, or non at all, but I think it adds a nice touch and they have been super popular when I posted them recently!

Nutty Buckeye bites
Makes 8

30g pecans
15g walnuts
15g almonds
2 tbsp cinnamon spice peanut butter *
1/4 Tsp cinnamon
1 Tsp maple

50g no added sugar or dark organic chocolate – I used Cacao Tree high protein chocolate**

Blend everything in a mini food processor first and roll into 8, approx 15g balls. Place in the fridge for about half he to firm up.
Melt your chocolate.
Like a flat try with baking paper.
Dip and roll each ball through the chocolate I find it best to scoop out with a spoon then roll onto a fork so some of the excess Choc drains off!
Transfer to your baking paper.
Repeat until all are done and the place in the fridge until set!

* you can just use normal peanut butter and add an extra dash of cinnamon instead.
** you don’t have to roll in chocolate you can leave as is or through nuts if you like! If your chocolate seems a little thick try thinning with a about a tsp of coconut oil.
