Chia seed puddings have become popular over the course of the last year and no wonder why! its so tasty and a quick dessert that can be whipped up without the need for cooking. Have you ever tried sago? This is what it reminds me of! I have started to make these for my housemate, as she loves them and buys them from a local cafe near her work as the perfect healthy alternative when craving something a little naughty. But at $5 a pop I thought I could save her some money when a jar of chia seeds is only $10 and you are bound to get 15 serves from it!
I have made chocolate chia seed puddings lately, I also made them with an increased protein content and made protein chia seed tiramisu pudding as well. Chocolate Chia Seed Pudding recipe
1/4c chia seeds
1c of milk of choice – or half water half milk
About 10 frozen berries
Sprinkle of coconut
1/4tsp vanilla bean paste
Combine your vanilla, milk, honey and cocoa and heat for thirty seconds in the microwave.
Stir well to combine, add your chia seeds and place in the fridge for about twenty minutes to start to set.
In a bowl, cup of jar of choice pour in half the chia mix, then add your berries and coconut.
Top with the remaining chia mix
Place in the fridge for min. two hrs, overnight or for the day
