Makes 4
1/2c almond meal
1/2c wholemeal plain flour
1tbsp wholemeal SR flour
1tsp baking baking powder
pinch salt
1 large banana
1/8tsp cinnamon
1/8tsp nutmeg
1/8c honey
1/8c no added sugar maple
60g organic butter softened
2 whole eggs
1/2tbsp soft coconut oil

Topping; optional sprinkle of pecans, crushed peanuts or coconut

Line or grease a muffin tin. Set over to 170 degrees
Mash your banana and salt and set aside
Sift your flours (not the almond meal) and add your baking powder, cinnamon and nutmeg. Set aside
Cream your butter and honey/maple. Add an egg one at a time, add to your mashed banana and whisk
Fold in your flours
Divide between four muffin moulds. Sprinkle with your nuts/coconut and bake for 25-30minutes or until skewer comes out clean

*can use all honey or all maple or even rice malt
two smaller bananas instead of one large
