I was laying in bed the other night and weird I know but thought of these, so yesterday morning I had to make them.
I think I will be having them for lunch again today, they were delicious
For the wraps;
2 whole eggs
pinch baking powder
1/4 scoop pea protein (I use Bulk Nutrients )
Whisk together and cook like a pancake, set aside to cool while you prep your fillings
My fillings included;
3 cherry tomatoes slices
Cauliflower rice (recipe below)
Tbsp Greek yogurt with seeded mustard

Bring a pot of water to the boil
Add your cauliflower florets
When water returns to the boil again cook for 1min then drain
Allow to at least half cool before adding to a processor with some salt and pepper or other spices of choice And blitz to a rice like consistency
If you over process you will get slush, same if you over cook!
Allow to cool before adding to your wraps or eat with other meals.
Yummy with coriander, red onion, cucumber and roasted almond slivers added to it too
