chirstmas spice cookes

My good friend Jess bought me this lovely chirstmas cookbook also with loads of amazing christmas decoration ideas and girft ideas! its amazing πŸ™‚ So of course I immediatly had to make something out of it! As I just love spices and its perfect with christmas I made the Christmas Spice cookies!

150g butter
1/2c brown suagr
3/4c golden syrup
1 egg
pinch salt
tsp baking powder
2 1/3c plain flour
1tsp mixed spice powder

Combine the butter, sugar and syrup in a mix master and combine to a creamed consistancy. It will be light and pale in colour. Add your egg and blend until well combined.
Add all your flours, mix by hand for this.
Once combined shape into a ball – i actually seperated into two balls. cling wrap and refrigerate for 20minutes.
Set your own to 180 degrees and you will need 3-4 large baking trays lined.
Flour a workbench and take your mix out. Flour your rolling pin and roll out to about 1cm thickness and cut with a cookie cutter. place onto tray and bake for 10-12 minutes.
allow to cook slightly before transferring to a wire rack to cook completely.
I then melted some chocolate and dipped half in, but you could use white choc, or drizzle it over in a pretty pattern, up to you! πŸ™‚
