SnickerDoodle Cookies

I made these by request of a freind who has started his competition prep and these are considered his cheat meal. I have been meaning to make them for a long time as well, they are so so easy. I would describe them as being a cinnamon sugar shortbread. So you can imagine the smell in the house as they cook!

The recipe for these:

SnickerDoodle Cookies

SnickerDoodle Cookies

Makes 26 biscuits

Ingredients
1 1/2c plain flour
1tsp cream of tartar
1/2tsp baking soda
pinch salt
1c unsalted butter room tempurature.
3/4c caster sugar
1 egg
1tsp vanilla bean paste
2tbsp caster sugar
1tbsp brown sugar
1tbsp cinnamon sugar

Directions
Turn the oven on to 180 degrees.
Line two baking trays.
Cream your butter and sugar together until light and fluffy. Add your egg and vanilla and blend until just combined and creamy, set aside.
Sift your flour, tartar, baking powder and salt into a bowl.
On a low speed combine the butter mix with the flour mix until just combined.
Chill in the fridge (or freezer for a quicker result) for min 30mins. I actually left mine for two hrs!
Combine your sugars and cinnamon well and set aside.
Remove from the fridge and roll into 1inch sized balls. Press down lightly and roll in the sugar cinammon mix and place on your tray with even space between each.
Bake for 10minutes, allow to cool slightly before transferring to a wire rack.
See how long they last!
