Potato and leek Soup with Bacon Jam on crusty bread

bacon, leek, potato, crusty bread = deliciousness in your mouth

This recipe requires the slow cooker, so a little thought a head of time. Although thought required very easy, and very rewarding.

The Bacon Jam, I tweaked the recipe only slightly from Add A Pinch.

Potato and Leek Soup with Bacon Jam on crusty bread

For the Bacon Jam
Start the morning of

600g bacon diced
3 onions diced
tbsp crushed garlic
salt and pepper – i used a smoked salt
1/2c brown sugar
tsp cumin
tsp chilli
1c vegetable stock
1/2c apple cider vinegar
1/4c pure maple syrup

In a heavy based pot cook off your bacon in batches till browned. remove and wet aside on some paper towel.
Leave the bacon juices in the pot and add your onion and garlic. Cook till softened and add all other ingredients.
Bring to the boil for a few minutes then add to your slow cooker. cook on high for 6hrs.
The sauce should have reduced and be nice and thick. If not quick pour into a pot and bring to a high simmer on the hotplate and reduce till required thickness. Serve n crusty bread.

I served with my potato and leek soup

8 white potatoes peeled and diced
2 leeks sliced
1.5L water or stock
2 vegetable stock cubes (omit if used stock above)
salt and pepper
olive oil
tbsp crushed garlic
1/2c cream
1 onion diced
In a deep pot add your oil and bring to temperature.
Add your onion, leek and garlic and cook till softened.
Meanwhile dice your potato – if dicing in advance be sure to cover with water so they don’t brown!
Add your liquids once the onions are cooked down and bring to the boil. Add you potato and season
If using stock cubes dissolve in a cup of water separate to the soup mix.
Cook until the potato is nice and softened then get a hand blender in there and blend to a smooth consistency – if you like some lumps thats fine too!
Optional: add bacon to the soup too – i didn’t as my bread is served with the bacon jam!
