Clean Pumpkin Pie

Christmas is July!

I love christmas, really love it. I think I like it more than my birthday. It’s a time we can all get together, family and friends, those that have been away come home, in Australia the weather is lovely and the sun shining, we put on a big lunch and enjoy the day. With an early starting morning and an early night as we take our full bellies to an afternoon nap. It’s a relaxing, unstressful day that should be enjoyed by all.

Some of the items we eat include a turkey, stuffing, thick gravy, garlic bread, glazed ham, roast potatoes and veggies, Pavlova, Christmas pudding, cherries, chocolate and brandy custard, doesn’t this all sound amazing!

What I was in America, some of the sweets that were everywhere around this time of year included peanut butter pie, pastries and Β pumpkin pie…it’s the pumpkin pie that stands out to me, smooth and creamy absolutely delicious.. I even watched cooking shows showcasing the traditional christmas dessert. But, I am all for an equally yummy healthy dessert. The standard pumpkin pie I have made in the past full of condensed milk, cream and brown sugar, sweet and delicious but not healthy one bit.. of course I am not saying not to have this amazing version, but if you want a cleaner version keep reading;

Pumpkin Pie Bites

The Base
1tsp honey
1/2c almond or hazelnut meal
1/2c un-chopped pecans
1tsp coconut oil
1tbsp + 1tsp nut or seed spread

Preheat the oven to 180 degrees.
Combine the meal and pecans into the food processor and blitz. add all other ingredients into the the processor and combine. Press into 6 cupcake silicon moulds. Place into the oven for 4-5 minutes and take out. Set aside.

The Filling
100g cooked pumpkin
1 egg
1tsp oil of choice – i used olive but you could use coconut oil
1/4c almond milk
1/8tsp clove
1/8tsp ginger
1/4tsp cinnamon
1/8tsp nutmeg
tsp maple
1tbsp coconut flour
Combine everything into a food processor and blitz till smooth. Spoon into your base cases and place into the oven 12-15minutes or until the centre is firm. Take out and allow to cool.

Note: If you want it sweeter add maple syrup, coconut sugar or alternative. standard pumpkin pies are made with cream and condensed milk so it will be less sweet – also dependant on the pumpkins sweetness.
