I have seen versions of these a lot lately, and I just had to try them myself! So I decided too!

The verdict? Soft chewy biscuit, with a gooey topping coated in a no added sugar chocolate. AND, they are considered ‘clean’ which is the real bonus, so perhaps you could treat yourself to another

The biscuit base

1c spelt flour

1/4c no added sugar maple

tsp vanilla

1/2tsp baking powder

1/3c almond meal

2tbsp organic butter melted

Set oven to 180 degrees celsius. Combine all the above ingredients and roll out to desired thickness onto a floured workbench. Using a cookie cutter or as I did my 1/4c measuring cup cut into biscuits and place onto a lined baking tray. Place straight into the oven for about 12-15minutes. once cooked take out of the oven to cool and put together the filling mix.

The Filling

2tbsp cashew butter

12 medjool dates – soaked

2tbsp coconut oil melted

2tbsp honey

Blitz these in a blender/food processor until smooth. and dollop on top of the biscuits. place into the freezer for 20 minutes to set slightly first

For the chocolate

melt 200g of chocolate and dip each biscuit into the choc, top first and allow to set on your tray in the fridge. Dip a second time if requiring a thicker coating
