The texture of this reminds me a lot of sago, for those that have had it the pearls of sago come together to form a pudding served hot or cold with almost a jelly consistency rather than a cakey traditional pudding. The chia seeds also come together in this similar consistency and in my own opinion I thought it was delicious! For a textural balance try adding things such as goji berries, crushed nuts, shredded coconut, almond slivers, sultanas etc.
Chia Seed Pudding
Ensure you start this the night before – it requires this time to set. it can be made a day or two ahead as well
Serves – 1
1/3c chia seeds
1tsp vanilla essence
1/2 scoop Bulk Nurtients Vanilla WPI
1c almond milk – or alternative choice of milk
serving suggestions: addition of sultanas, coconut, goji berries, fresh berries, added honey etc.
to make, combine everything into a bowl or a jar and stir or shake o combine. Cover and refrigerate overnight until set. Eat with you choice of optional toppings!
