Peanut Butter Cream Pie

Words can not even describe the delicious flavours that come from this combination of creamy lightly salted peanut butter whipped filling, on a sweet and crisp base with a smooth spread of creamed chocolate top.

The ultimate peanut butter indulgence. note; I said indulgence. If you count calories, you might want to stop before you decide to treat yourself with dessert.

Peanut Butter Cream Pie

Peanut Butter Cream Pie Recipe

1c finely ground coffee biscuits or similar

3/4c finely ground peanut brittle

7-8 tbsp melted butter

1/3c sugar of choice (I used caster)

1/2 tub mascapone

1c smooth peanut butter

3/4c thickened cream

1tsp vanilla

1/2 c chocolate – I used milk

1/4c cream – additional

1. first melt your butter and grind your biscuits and brittle. Combine all and press into a standard sized cake tin – one with removable sides works best. Place into the fridge while you prepare the filling.

2. Combine the mascapone, sugar, peanut butter into a bowl and using a mix master on high until combined. Then add your cream, a bit at a time to whip it in. On a high setting. Once well combined pour over your base mix and place in the fridge until the next step is ready.

3. Combine the 1/4c cream and chocolate in a bowl and melt either over heat on the stove top or as I did in the microwave. Once melted and combined, pour over the filling layer. Place into the fridge for min 1hr to set.
