I love RAW desserts and treats, not for the health factor of raw, I’m sure we all know by know the nutritional benefit of not cooking things is greater than when you do. But because it makes them so fast to whip up!
This little tarts, I whipped up in 15 minutes this morning before work. Meaning when I get home tonight after the gym and cook dinner, a treat is already catered for, to easy! Of course, the little devil on my shoulder reminds me there is a downside to every benefit – Being so quick to produce, means it’s more willpower to force myself not to make them all the time and consume them all on one hit. Ahh the self-control….
Raw Peanut butter and Banana Tarts
serves: 4 (mini)
For the base;
1/2scoop Bulk Nutrients chocolate WPI
1/3c almond meal
1/2tbsp coconut oil melted
1/8c almond milk (or other)
Combine all the base ingredients into a bowl and press into 4 mini tart or cup silicon moulds. Place in the freezer to set – 5mins
For the filling
1 small banana
1/2tbsp vanilla bean paste or essence
1/2tbsp no added sugar maple
Tbsp melted coconut oil
1/4c natural peanut butter (I used crunchy)
Combine all into a mini food processor and pulse into a smooth paste.
Remove moulds from freezer and if set remove from cases (leave in if you want). Fill the tart shell with the mouse filling and garnish with crushed peanuts and cacao nibs!
Consume immediately! Or store in the fridge .
